A Story Born from
the Heart of Mexico

Cafe Rio began with a simple dream: to bring the bold, vibrant flavors of authentic Mexican cooking to every table in Salt Lake City.

Founded in 2005 by the Rivera family, Cafe Rio started as a small taqueria tucked into a corner of downtown Salt Lake City. Armed with generations-old family recipes and an unwavering commitment to fresh, quality ingredients, we quickly became a neighborhood staple.

What began with just a handful of tables and a wood-fired grill has grown into one of Utah's most celebrated Mexican dining destinations. Every tortilla is hand-pressed, every salsa is made fresh daily, and every dish is a tribute to the culinary heritage that inspired it all.

Today, we serve thousands of guests each week — but our commitment remains unchanged. We cook the way we always have: with care, creativity, and an obsession with flavor that you can taste in every single bite.

2005

The First Tortilla

Maria and Carlos Rivera open Cafe Rio in a 600 sq ft space on 400 South, Salt Lake City. Armed with family recipes and a hand-me-down cast iron comal, they serve their first 40 guests on opening day.

2008

Word Spreads Fast

Featured in Salt Lake Magazine's "Best New Restaurants," Cafe Rio earns its first major award. Weekend wait times hit two hours. The Rivera family doubles the dining room and adds a full bar program.

2011

Catering Takes Off

After popular demand, Cafe Rio launches its catering division. Our first major event — a 400-person corporate dinner — cements our reputation beyond the restaurant walls and opens new revenue streams.

2015

A Decade of Flavor

Celebrating 10 years, Cafe Rio unveils a full kitchen renovation and expands the menu to over 80 items. We introduce our signature slow-braised barbacoa recipe and launch a loyalty rewards program.

2019

Online Ordering & Delivery

Cafe Rio goes digital, launching an online ordering platform and partnering with major delivery services. In the first month alone, over 2,000 online orders are placed — exceeding every expectation.

2022

Franchise Program Launches

After years of interest from investors and fans across the country, Cafe Rio opens its franchise program. The vision to spread authentic Mexican cuisine nationwide takes its first steps beyond Utah's borders.

2025

20 Years & Growing

Cafe Rio celebrates two decades of handcrafted excellence. With 500,000+ guests served, a thriving catering division, and franchise locations in development, the story is far from over — the best chapters are still being written.

With 30+ years in Mexican cuisine, Carlos brings the authentic flavors of Oaxaca and Jalisco to every dish. His recipes are rooted in family tradition and elevated by classical culinary training.

Maria Rivera

Co-Founder & GM

Maria is the operational heartbeat of Cafe Rio. Her natural gift for hospitality and sharp business instincts have shaped the warm, welcoming culture that guests love the moment they walk in.

Jordan Lee
